A scientific theory is something we've seen happen and can prove that it happens, as well as that it's supported by a ton of testing. We don't absolutely know for a fact that it's 100% true, as it's not a law. It can be proven false as our technology improves, but for now the theory is what the scientific community generally agrees upon and is hopefully true
